BAKED SALMON WITH SPINACH AND MOZZARELLA

INGREDIENTS:

  • 4 frozen salmon fillets, skin on (170-200 g each)
  • 150 g of natural yoghurt
  • 1/2 cup of spinach, finely chopped
  • 2 cloves of garlic, squeezed through the press
  • 3 tablespoons of chopped parsley
  • 3/4 cup of grated mozzarella
  • salt pepper

PREPARATION:

  1. Turn on the oven and set it to 180 ° C, line the baking dish with baking paper.
  2. Salt and pepper the washed and dried fillets on each side, then place the skin side down in the baking dish.
  3. In a bowl, combine the spinach, yoghurt, garlic, parsley and season with salt and pepper to taste. Place the spinach on the fillets and sprinkle with the mozzarella.
  4. Bake for 15-18 minutes, uncovered, then increase the temperature to 200 ° C and bake for another 5 minutes or until the cheese is golden brown. Serve immediately.
